Ingredients

  • •For the base
  • •2 Trader Joe's thin pizza crusts (1 pack)
  • •1/2 cup pizza sauce or marinara, about 1/4 cup per crust
  • •1 1/2 cups shredded mozzarella
  • •1/4 cup grated Parmesan
  • •For the sauteed veggies
  • •1 tablespoon olive oil
  • •1 pack cremini or white mushrooms, sliced (about 3 cups raw)
  • •1 green bell pepper, sliced
  • •1 garlic clove, minced (optional)
  • •1/2 teaspoon Italian seasoning or dried oregano, plus a pinch for the top
  • •Salt and black pepper, to taste
  • •For the fresh toppings
  • •1/2 cup sweet corn kernels, thawed if frozen or drained if canned, patted dry
  • •12 to 15 grape or cherry tomatoes, halved
  • •12 to 15 fresh basil leaves
  • •Optional finishes
  • •Red pepper flakes, a drizzle of olive oil or balsamic glaze and extra fresh basil

Instructions

  1. 11. Preheat the oven. Heat the oven to 400°F (200°C) with a rack in the center.
  2. 22. Saute the mushrooms. Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms in a single layer and cook undisturbed for 2 to 3 minutes, until browned underneath. Stir and cook 2 to 3 minutes more, until their liquid has cooked off.
  3. 33. Add the peppers. Stir in the bell peppers and garlic and cook for 2 minutes, until just tender. Season with salt, pepper and the Italian seasoning, then move to a plate.
  4. 44. Prep the fresh toppings. Halve the tomatoes, pat the corn dry with a paper towel and pick the basil leaves off their stems.
  5. 55. Sauce the crusts. Set both crusts on the pizza screen or baking sheet. Spread about 1/4 cup of sauce over each, leaving a 1/2-inch border.
  6. 66. Add the toppings. Scatter the mushroom-pepper mixture and corn over the sauce. Add the tomatoes cut side up and tuck in the basil leaves. Cover with the mozzarella, then the Parmesan and a pinch of Italian seasoning.
  7. 77. Bake. Bake for 5 to 7 minutes, until the cheese is melted and bubbling and the crust edges are golden. Start checking at 5 minutes, since ovens vary.
  8. 88. Rest, slice and serve. Let the pizzas rest for 1 to 2 minutes, then slice into strips or squares. Finish with fresh basil and red pepper flakes, if you like.

Notes

Tips 1. Cook the mushrooms first. Raw mushrooms release water in the oven, and a 5 to 7 minute bake can't drive it off. 2. Dry the wet toppings. Pat the corn and tomatoes dry so they don't pool juice on the crust. 3. Go light on sauce. About 1/4 cup per crust is plenty; more softens the center. 4. Place tomatoes cut side up. Their juices evaporate in the oven instead of soaking into the crust. 5. Keep the basil green. Basil darkens in the oven, so tuck it under the cheese or add half after baking for bright color. 6. For browned cheese, broil briefly. Broil for 30 to 60 seconds at the end and watch closely, since thin crusts scorch fast.
